Shrimp Lo Mein


Lo mein is a Chinese dish with egg noodles that often contains vegetables and some type of meat or seafood or can also be eaten with just vegetables.  

The easiest way to prepare a meal for your family is with a convenient one-pot meal that is just a satisfying as one that your slaved over the stove for hours to prepare. 

We all have those days when work was stressful, the kids are acting up and you simply feel like there are not enough hours in the day.  When this happens, I turn to those aged old recipes that can satisfy my boys in minimal time.

I would share with you today one such meal that I guarantee would be a hit with everyone.   



Ingredients
1 pk. Egg Noodles
1 lg. Sweet Pepper (chopped)
1 lg. Carrot (thinly sliced)
¼ of a Cabbage (shredded)
¼ cup Chives (chopped)
2 tablespoons Ginger (grated)
2 tablespoons Sesame Oil
¼ cup Oyster Sauce
2 tablespoons Fried Rice Seasoning
2lbs. Shrimp (med)

Directions
Clean and season shrimp and set aside.
Boil noodles for 15 minutes and strain

In a heated wok, add sesame oil and ginger, add shrimp and cook for 15 minutes or until the shrimp is well-cooked.

 Add sweet peppers, carrots and cabbage and stir fry until the veggies are tender. 


Add boiled noodles, chives, oyster sauce and fried rice seasoning and stir for 5 minutes until all the ingredients are evenly combined. Remove from heat and serve.
