Barfi



It’s that time of the year in Trinidad where no matter your religion, race or class everyone takes part in the culinary delights that the Divali festive brings.  In addition to the curry we have an array of traditional Indian sweets that are sure to make your sweet tooth jump for joy. 

Today we would be making Barfi.  Barfi is a powder milk based sweet confectionery from the Indian subcontinent.  The name is actually derivative of the Persian word Barf which means snow.
Here is my recipe for this amazing treat.

Ingredients
4 cups full cream milk
1 tin creamer
1 tsp. elychee
½ tsp. ginger (grated)
3 cups white sugar
1 cup water
Cake sprinkles

Method
In a large bowl, add powered milk and creamer and using your hands combine until the mixture looks grainy. 
Using a food processor, grind the mixture until it becomes like sand. 
In a sauce pan, boil the water, sugar, ginger and eliche for about 10 mins 
Add the sugar syrup to the milk mixture and using a spoon mix until the syrup is well incorporated.
Grease a baking dish or tray and empty the mixture onto it using your hands to press down until it is evenly distributed.  
Add your cake sprinkles and cut into squares before it cools 
Allow to cool for about half an hour and serve.
