Sawine is a dish that is usually made for the Muslim
festival of Eid which is celebrated in Trinidad and Tobago to mark the end of the
month of Ramadan.
It is a rich sweet treat made with vermicelli,
condensed milk, evaporated milk and flavoured with spice. I would share with you my family’s recipe
today however, there are different variations and you can make your own exclusions
and inclusions according to your taste.
I learnt how to make this from my mom and in time I made
my own changes for my boys as we all know how picky children can be.
INGREDIENTS
1 (200g) pk. of vermicelli
5 cups water
1 cup evaporated milk
3/4 cup condensed milk
1 pk. Cinnamon stick
1/4 cup peanut butter
OPTIONAL
- Cherries
- Almonds
- Raisins
- Cranberries
METHOD
Heat pot over low to medium heat.
Add vermicelli and continuously stir until golden brown. Be very careful not to burn the vermicelli. Set aside.
Parching gives this golden brown color. Stir continuously to ensure the vermicelli does not burn
In another pot, add 5 cups water and cinnamon stick and bring to a boil.
Turn off the heat and immediately add the parched vermicelli. Cover pot and let sit for roughly half hour to an hour.
Add evaporated milk and condensed milk.
Stir well.
You can add raisins, cherries and almonds if you like.
